Interesting point. Do the novels throw any light on the reasons? Maybe there was something in the original script that got cut for budget?
Although, Max was relatively well known (as has been discussed a little while ago) and His name was rather unique, so maybe a bit about him (and a brief overview of his life/family) would have been on the news after some daring arrest?
There could have been a shot in the ice cream in the face scene where Jessie was asked her name by Toecutter and gave it, which later ended up in George Miller's kitchen swing bin...

They proably were following Max and his family. Remember FiFi said that the gang was coming for him. They proably went to some lengths find out any other information.
But that thought is flawed by the fact that they seem to not know who they are when Toe Cutter shows up behind them talking to the mechanic.
Yeah, badarses with money (or in the case of our TOECUTTER, lots of force), can get any information they need. Wouldn't be too hard, MAX was a high profile cop, lots of attention braught to him, not just from the death of NIGHTRIDER, you heard JESSE "you made the news AGAIN".
But in the novel, i don't think its answered either, its been a while since i read it. But it goes into great length about the gang hunting MAX, especially after CUNDALINI loses his hand. They follow his trail for miles, threatening people for information etc. all the way to MAY's house, JESSE's name is probably in there somewhere.
