I think the problem with the concept of reboot/remake or sequel/prequel/side-quel is that some things are almost there for the RW era (the French Toast Intercepto)r, but too wild to be of that timeframe and too well designed to be of the Thunderdome era (yet his jacket matches that era). I can't see Miller rebooting the Max universe in the middle of the story arc. A major part of what made Max real to us is that his story had a fleshed out beginning movie, a lived in middle movie and an 'out of retirement' third with each standing on it's own. To reboot the character for a new audience with his origins told only in flashbacks or an extended prologue would stunt the growth of the reboot. The idea of it being an 'interpretation' of the memories of a future storyteller doesn't fit with the effort to get the car and jacket being so close to what they were in the originals.
I think Miller is a little more linear than that. My feeling is a story set after Thunderdome, with the FR (French Toast) Interceptor used to shoot scenes of Hardy to mesh with RW footage for a prologue (ala RW).
The evidence and facts we do have don't quite jive with each other. I vote for Red Herring on some things or Miller has some surprises for us.

I think the Interceptor was actually modified after the 2003 version was aborted, it went over to Africa looking like it did in the original film and when they shipped it back here it was in storage for a few years and then modified.

I don't think Miller said the film will be a reboot. The word was only in the headlines of (misinformed?) medias. I don't think Miller ever used the word reimagining. Only actors did. In fact Miller said nothing. Biolumen can correct me if I'm wrong
Maybe I am (Ok, I didn't read this summer pitch of the movie to not spoil myself... maybe he used the words there...). Miller is the Man, I'll only accept what he has to say on that matter, like he did in 1985, describing Max as a prince of some sort (in french at least) wandering in the desert for 15 years since Mad Max 2. I'll wait the release of Fury Road and the interviews of the director to discover the true nature of this new adventure. However the jacket, as a copy of the Thunderdome jacket, is a clue I think, at least a reassuring element for me. But the main element is the fact that the Fury Road script was written for the Mel Gibson 2003 movie... and that, the fact this is the same script, is essential to understand that this film will probably be a chapter 4 in the Mad Max saga... or, nonetheless, could easily be seen as such.

I wonder why for the 2003 Fury Road, the original looking Interceptor would come into play, I can understand the wasteland version.....

To me, this post by RW-777 last year is the most plausible description of Miller's vision for Fury Road and beyond.When Mad Max 4 fell thru in 2003, Gibson announced his retirement from acting, to directing. So Miller had to come
up with a new plan while making Happy Feet. But he ended up having more ideas, and it blew out into a new trilogy.
So, casting for a new Max was then centred around a new Max for a new Trilogy. Not a post-Thunderdome Max, or an
in-between MM1 & MM2 Max. Under those circumstances, all you do is retro-fit the main, bare bones iconography that
people identify as Mad Max, the car + costume, and reorchestrate the story setting for 'post'-modern times. It's really the only
option Miller had, but you get a brand-spankin' new TRILOGY to play with. The whole beard thing is probably for a short synopsis of where Max has been before the first movie. And the whole new universe is supposed to be centred around different tribes and whatnots.

It's likely the green screen is for getting the close ups for the chase sequences. Much like The Road Warrior most of the close ups where done while the truck was stationary or moving quite slowly.
