It would probably be more durable in the long run, as commercial vehicles are generally made to withstand a certain amount of overwork and neglect. Even though the rig was probably three years past its recommended service interval, it appeared to run quite well...
And of course, a rig can be used to pull trailers and fuel tankers!
True. Max's car was originally rigged to produce 600 horses. That engine would need a hell of a lot of work to keep it tip top. I reckon by the time of the second film, that as good a mechanic as max might have been, the lack of decent workshops, spares and tools would tell on the motor. Also, the inlet mannifold would be near dying point anyway. Years of driving in a desert, sucking in god knows how much dust and sh*te through that big assed blower would have an effect. I reckon he probably was starting to look for a possible future replacement.
If you look at the blower on the Interceptor in MM2, it looks considerably cleaner than the rest of the car, suggesting that it had ben replaced/overhauled recently. Perhaps the rest of the engine was in the same shape?
The looks of car were unimpotant at that point in time, but Max needed the Interceptor to have a 'heart of gold' due to the way he drove, so he probably focused his attention on keeping the the mechanicals the way that Barry intended.

I fancy that Max would probably check out any establishment that used to be involved with motor vehicles that he came across (From a simple auto accessory shop, to the MT department of a military base) for oil, filters, batteries,etc. and would loot any Falcons or Ford dealers he came across for specific spares (Maybe stockpiling them in a hidden central location). I definitely would.
Maybe he rigged up an auxilary charging system, like with some caravans, to keep a spare battery in the boot charged up whilst driving. Likely we will never know...
