I often thought while watching this, that the singer at the Cabernet that Goose picks up (or she picks him up, depending how you look at it) I wonder if she was a set up by the Toecutter or if she really just wanted to sleep with the Goose? I think she may have been a set up as it works better for Johnny's plan because though Johnny did follow Goose back to her place, having her pick him up bought Johnny more than enough time to set up the bike. In addition, it makes sure when and where Goose was going to be and where which way he was going to go back to work in the morning. Plus it saved the bike from breaking down randomly had The Goose rode hard and home on that night had he not picked up the singer. Am I wrong in the whole thing? Because even that smile she gave at the end of her song towards Goose as she "Knew she had him" works in this theory for me. Thoughts on this. Was it all coincidence? Or does it show a much more "Social siding" with Toecutter and his gang against the cops, as also shown by the grease monkey/blackfinger at the end who worked for the gang?

That whole thing with the girl was a setup for a bit more elaborate theme involving Goose.

He was supposed to have a girlfriend, but he was also a scumbag that cheated on her. So he went to the club, cheated on her with the singer, then there was another scene that was actually filmed but never put in the movie. He was patrolling the road and there was a lady down the side of the road with her car broken down. He 'helped her' i.e. they fucked, he went on about his business and then crashed the bike. So I don't think the singer was set up by the Toecutter gang, it was just part of many themes that were never fully envisioned on screen.
There was a lot of those, my favorite has to be the scene where Sprog eats the bullets from Max's revolver and he shits them out into a pot. I'm not kidding that was a scene from the script.
